This Southwest Cornbread Recipe is just like your favorite cornbread recipe with a some delicious southwest flavor!

Ingredients needed to make Southwest Cornbread:

1/2 cup unsalted butter, melted

1/2 cup sugar

4 eggs

15 ounces canned cream-style corn (1 can), undrained

4 ounces canned diced green chilies (1 can), drained

1/2 cup shredded Pepper Jack cheese

1/2 cup shredded sharp cheddar cheese

1 cup flour

1 cup yellow cornmeal

4 teaspoons baking powder

1/4 teaspoon salt

How to make this Southwest Cornbread Recipe:

Spray a 9×13″ baking pan with non-stick cooking spray. Set aside.

Preheat the oven to 300 degrees F.

In a large mixing bowl, beat together butter and sugar.

Add in eggs one at a time, beating after adding each egg.

Stir in corn, chilies, and cheeses.

In a separate bowl, mix together flour, cornmeal, baking powder, and salt. Add in flour mixture with the wet ingredients and mix until all incorporated.

Pour cornbread batter into prepared pan.

Bake for 60-70 minutes or until toothpick inserted into the center of the cornbread comes out clean.
